Cake Batter Porridge

Cake for breakfast anyone?

Ok so it's not cake exactly, but this creamy porridge conjures up childhood memories of licking the batter of the spoon and I'm obsessed!

All you need is some fine semolina which you can find in most grocery stores, protein powder and egg whites. I topped mine with peanut butter but you could use Nutella, Honey, Biscoff spread and and/or fruit too!

Ingredients

300ml milk of choice (I used unsweetened almond)

50g egg whites (optional, it works just as well without)

30g semolina

1 scoop protein powder - I use PEScience Cake Pop but if you can’t get cake flavour, any vanilla protein will do.

Optional toppings: 15g nut butter of choice/ Nutella, Honey or Biscoff Spread. You can also use fruit, seeds or nuts.

Method:

  1. Bring the milk to a light simmer but don’t boil

  2. Add in the semolina and cook for about 8-10 minutes or until it starts to thicken, stirring constantly to prevent lumps.

  3. Once the porridge is nice and thick, add in the egg whites and whisk continuously for another 2 minutes. It should be lovely and creamy and smooth at this point.

  4. Turn off the heat and add in the protein powder.

  5. Mix thoroughly. If it’s too thick add a bit more liquid.

  6. Spoon on your toppings and enjoy!
