Chicken Pad Kra Pao (Thai Basil Chicken)

This Thai recipe is no exception, it’s as spicy as you want it to be, packed full of flavour and can be whipped up in no time - perfect for a quick lunch or a cozy night in.


Ingredients:

500g chicken breast cut into strips

5 cloves garlic

As many chillies as you can handle

1 shallot

1 cup Thai Basil

30ml oyster sauce

30ml soy sauce

5ml fish sauce

10 ml vegetable oil

Optional: Green Beans


Method:

  1. In a bowl, combine chicken breast, oyster sauce, soy sauce and fish sauce. Leave to marinate.

  2. In the meantime, blend or mash the chillies, garlic and shallot into a paste.

  3. Once chicken has marinated, heat oil in a skillet or wok and add the garlic, chillies and shallot. Cook for ~ 2 minutes or until aromatic.

  4. Add in chicken and cook on a medium-high heat until chicken is brown.

  5. Add basil and green beans if using and cook for a further 2 minutes.

  6. Serve with rice.
