Chicken Satay Skewers


I could eat peanut butter on anything and everything.


So peanut butter on chicken? I am ALL over it.


Even if you don’t love peanut butter as much as me, these chicken satay skewers with peanut dipping sauce will blow you away.

The chicken is tender and flavourful and combined with the creamy, umami peanut sauce? You’ve got a match made in heaven!


Notes:

You can cook the skewers in the oven, on a grill or on a hot pan.


 

Ingredients

For the chicken:

  • 500g chicken breast, cut into thin strips

  • 2 tbsp soy sauce

  • 2 tbsp lime juice

  • 1 tbsp honey

  • 1 tbsp sriracha

  • 1 tsp garlic paste

  • 2 teaspoons crushed ginger

  • 1 tsp fish sauce (optional)

  • 1 tsp turmeric

  • 1 tsp red chilli flakes (optional)

  • Skewers (If using wooden skewers, soak in water for 30 minutes to prevent scorching)

For the satay sauce:

  • 60g peanut butter

  • 1 tbsp honey

  • 1 tbsp soy sauce

  • 1 tbsp sriracha

  • 1 tbsp lime juice

  • 1 tsp red chilli flakes (optional)

  • 1 tsp crushed ginger

  • 1 tsp garlic paste

  • Water as needed for thinning

Method:

  1. Combine all ingredients for the chicken and leave to marinate for a few hours or overnight.

  2. When ready to start cooking, preheat the oven to 200C or Gas Mark 6.

  3. Thread the chicken pieces onto skewers, place onto a baking tray and bake for 20-25 minutes or until the chicken is cooked through.

  4. In the meantime, place all the ingredients for the satay sauce, except the lime juice, into a small saucepan and place on a low heat, stirring constantly.

  5. Once the sauce has thickened, remove from heat and add in the lime juice. Stir well and add water if needed. Set aside.

  6. Once the chicken is cooked, drizzle with some of the satay sauce and serve the rest on the side in a dipping bowl.

  7. Garnish with peanuts, coriander and extra chillies for a kick.

Serves 4:

Macros per serve with sauce: 293 calories, 10g fat, 14g carbs, 34g protein.

Macros per serve without sauce: 181 calories, 3g fat, 7g carbs, 29g protein.
