I am a dessert person through and through. Give me a crème brûlée or tiramisu and I’m in heaven.
But I can very rarely be bothered to spend that much time creating all my dessert fantasies which is where this fluffy, chocolatey microwave mug cake comes in. It takes less than 5 minutes to whip up, needs very few ingredients and satisfies my cravings in just a few bites.
If you don’t have oat flour, just use your blender to blend up some oats into a fine powder and you’re good to go. All the other ingredients you’ll probably have lying around.
Dessert tonight is sorted😉
Ingredients:
1/2 banana
20g oat flour (you can just use oats and blend them)
15g smooth peanut or almond butter
30ml almond milk
20g chocolate chips
1/2 tsp vanilla extract
1/4 tsp baking powder
Method:
Blend all the ingredients except for the chocolate chips together.
Pour the mixture into a microwaveable mug or ramekin and stir in the chocolate chips.
Microwave for 60-75 seconds depending on your microwave. Start off with 60 seconds and increase from there, an under-baked mug cake is better than a dry one!
Dig in immediately!
