Rice pudding is one of my favourite desserts of all time but if I had to make it from scratch I would probably never have it.
That’s why I love this cheat version so much - it’s quick and easy but still tastes just like the real thing. It’s also high in protein which makes it a delicious alternative to your usual porridge.
I’ve used a boxed coconut drink here but any dairy or non dairy milk will work perfectly.
Make it vegan by using vegan protein powder.
Ingredients
100g cooked rice
1 scoop vanilla protein
powder
125-150ml coconut milk (not tinned, eg Rude Health or Alpro)
Optional for garnish: Shredded coconut/ coconut flakes/ almond flakes
Method:
Heat the coconut milk in a pot but don’t boil
Add in the cooked rice and simmer for a few minutes or until the rice starts to thicken and soak up the milk.
Remove from the heat and stir in the protein powder.
Add on your choice of toppings and enjoy!
