Greek-Style Nourish Bowl



Packed full of fibre and veggies with a delightful creamy tang from the feta, this Greek-style Nourish bowl is the perfect meal for a summery day.


It's topped with a dollop of homemade Tzatziki to balance every mouthful perfectly.

Bulk it up with added protein such as halloumi or chicken for a main meal, or serve it as a side for a great addition to any bbq (or braai as we would say in Zim).

 

Ingredients

  • 50g wholewheat couscous (dry weight)

  • 100g cooked chickpeas

  • 1/2 red onion

  • 1/4 cucumber, cut into quarters

  • 6-7 cherry tomatoes, halved

  • 30g feta, cubed

  • 20g kalamata olives, halved

  • 1/4 tsp dried oregano

  • 1/4 tsp dried thyme

  • Salt and pepper to taste

For the Tzatziki

  • 75g low-fat, plain Greek yoghurt

  • 30g cucumber, grated

  • 1/2 tsp minced garlic

  • 1 tsp lemon juice

  • A few fresh mint leaves, finely chopped

  • Splash of olive oil

  • Salt to taste

Method


  1. Place the couscous in a large bowl and cover with boiling water. Cover and leave for 8-10 minutes then break up gently with a fork.

  2. Season the chickpeas, cucumber, cherry tomatoes, red onion, feta and olives with salt, pepper, thyme and oregano. Set aside.

  3. To make the tzatziki, mix together all the ingredients in a medium-sized bowl.

  4. Once the couscous is ready, assemble your nourish bowl by mixing the veggies and couscous together. Add a dollop of tzatziki and enjoy!
