Packed full of fibre and veggies with a delightful creamy tang from the feta, this Greek-style Nourish bowl is the perfect meal for a summery day.
It's topped with a dollop of homemade Tzatziki to balance every mouthful perfectly.
Bulk it up with added protein such as halloumi or chicken for a main meal, or serve it as a side for a great addition to any bbq (or braai as we would say in Zim).
Ingredients
50g wholewheat couscous (dry weight)
100g cooked chickpeas
1/2 red onion
1/4 cucumber, cut into quarters
6-7 cherry tomatoes, halved
30g feta, cubed
20g kalamata olives, halved
1/4 tsp dried oregano
1/4 tsp dried thyme
Salt and pepper to taste
For the Tzatziki
75g low-fat, plain Greek yoghurt
30g cucumber, grated
1/2 tsp minced garlic
1 tsp lemon juice
A few fresh mint leaves, finely chopped
Splash of olive oil
Salt to taste
Method
Place the couscous in a large bowl and cover with boiling water. Cover and leave for 8-10 minutes then break up gently with a fork.
Season the chickpeas, cucumber, cherry tomatoes, red onion, feta and olives with salt, pepper, thyme and oregano. Set aside.
To make the tzatziki, mix together all the ingredients in a medium-sized bowl.
Once the couscous is ready, assemble your nourish bowl by mixing the veggies and couscous together. Add a dollop of tzatziki and enjoy!
