Halloumi & Fig Salad


As the days grow longer and warmer here in the Northern hemisphere, it’s time to say goodbye to soups and stews and hello to delicious, summery salads packed full of flavour, colour, and crunch.


This one is just so perfect for BBQs/ Braais and long outdoor lunches that stretch into the warm summer evenings.


It can be enjoyed as an accompaniment to any protein or served on its own as the meal's main event.

 

Ingredients:

1 bag of mixed salad leaves

1 x 250g block light halloumi, cut into slices

6-8 figs, cut into quarters

1 tbsp mixed seeds

1 tbsp walnuts or pecan nuts


For the dressing:

1 tbsp olive oil

1 tbsp balsamic vinegar

1/2 tbsp honey

Salt and pepper to season


Method:

  1. Heat a non-stick pan or griddle on high heat and grill the halloumi for a few minutes on each side.

  2. In a bowl mix together the ingredients for the dressing and season with salt and pepper.

  3. When the halloumi is ready, start to assemble the salad by adding the bag of salad leaves to a large serving bowl.

  4. Place the figs and halloumi on top of the salad leaves and pour over the dressing.

  5. Finally, sprinkle with the seeds and nuts and serve as a side dish or the main event.
