Upgrade your beans on toast game with my mum’s masala baked beans that were a staple for me growing up.
Made with onion and spices, these masala beans are creamy, rich and popping with flavour.
Serve on warm, buttered toast as is or add some cheese and melt under the grill for some extra comfort and indulgence.
Ingredients:
1 small onion, finely chopped
1 tin of baked beans
1 tbsp vegetable oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
A few curry leaves
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp turmeric
1/2 tsp paprika
Salt to taste
Method:
Heat the oil in a saucepan on a medium to high heat.
Add in the mustard and cumin seeds and curry leaves.
Once the seeds start to pop, add the onion and sauté until soft.
Add in the baked beans and spices, stirring well.
Simmer for 5 minutes and they're ready to serve!
