No-Bake Biscoff Cheesecake


This no-bake cheesecake in a jar is a delicious no-fuss alternative to regular cheesecake.

The cheesecake mixture is made with greek yoghurt and cream cheese and I’ve added protein powder for a bit of extra sweetness and protein. If you’d rather not use protein powder you can just add your choice of sweetener instead.

It's topped off with a delicious, buttery biscoff biscuit crumb for the most perfect, well-rounded mouthful of heaven.

You can make this ahead of time and store it in the fridge or you can eat it right there on the spot, something I may or may not have done when I tested out this recipe😳

Ingredients:

  • 150g plain fat-free Greek yoghurt

  • 60g fat-free cream cheese

  • 30g vanilla protein powder (optional)

  • 30g biscoff spread

  • 2-3 biscoff biscuits

Method:

  1. Mix together the yoghurt, cream cheese and protein powder (if using) in a bowl or jar.

  2. Place the biscoff spread in the microwave for ~20 seconds until slightly melted to make it easier to combine. Stir through the yoghurt and cream cheese mixture.

  3. Crush or blend the biscoff biscuits into a crumb and spoon on top of the cheesecake mixture.

  4. Eat immediately or keep in the fridge for later!
