Red Velvet Crinkle Cookies


What do you do when you have a box of cake mix but no eggs, oil or butter?


You use a fizzy drink obvz👀

Yes, you read that right… I know it sounds super weird but it works, I don’t know how I don’t know why but replacing the eggs and oil/butter with any fizzy drink produces a delicious fluffy cake.


Or in this case, delicious, gooey cookies.


I’ve gone for coke zero here because I prefer a darker drink with a darker cake, and using the diet version also makes these super low calorie if that's what you're after. But you can use any fizzy drink you like - Coke, Dr Pepper, Sprite or even just soda water. I promise you won’t taste it at all.

The dough will come out quite thick and sticky so I suggest chilling it in the fridge for about 30 minutes before handling it. You can also use a cookie scoop to make it easier/less messy or pour some oil/flour on your hands to prevent the dough from sticking as much.


Done in just 8-10 minutes, this is the quickest, easiest cookie recipe ever!

 

Ingredients:


  • 1 box red velvet cake mix

  • 125ml coke zero (or any fizzy drink)

  • 50g Icing sugar for rolling the cookies

Method:


  1. Preheat the oven to 180C/ 350F. Line a baking tray with baking paper. Add the icing sugar to a small bowl and set aside.

  2. Add the cake mix to a large bowl and pour in the fizzy drink. Mix well until thoroughly combined and there are no lumps.

  3. The dough should be quite thick and sticky at this stage. Leave to chill in the fridge for 30 minutes.

  4. When you're ready to bake, scoop the dough into balls and roll in the icing sugar. Put some oil or flour on your hands if you're struggling to handle the dough.

  5. Place on the baking tray at least 5 cm apart and pop the tray into the oven. Bake for 8-10 minutes or until the cookies have started to puff up and crinkle at the top.

  6. Don’t overbake or they’ll dry out, we want them gooey and soft. Allow them to cool completely before removing them from the baking paper or they'll stick.

  7. And that's it, your batch of cookies is ready!


Makes about 20 cookies (depending on how big or small you want them)

Macros per cookie: 80 calories, 0.8g fat, 17.5g carbs, 1g protein
