San Choy Bau (Chinese Lettuce Wraps)


Chinese lettuce wraps, also known as San Choy Bau/ San Choi Bau / San Choy Bow (so many different spellings!), are one of my favorite Asian dishes that’s a bit on the lighter side.


They’re great for the warm weather or for those days when you want a tasty meal that’s not too heavy or rich.


Each mouthful is packed full of flavour and crunch, without being packed full of calories.

You can use either turkey breast mince or chicken breast mince, or pork mince if you prefer but that will alter the macros.

 

Ingredients

For the filling:

  • 500g lean turkey or chicken breast mince

  • 3 shallots thinly sliced

  • 1 or 2 red chillies

  • 4 cloves garlic

  • 1 tsp crushed ginger

  • 15ml peanut oil

For the Sauce:

  • 30ml soy sauce

  • 30ml oyster sauce

  • 5ml sesame oil

For serving:

  • Lettuce cups - you can use iceberg or little gem

  • Chopped peanuts

  • Coriander

Method

  1. Heat the peanut oil in a large wok or skillet and add in shallots, chillies, ginger, and garlic.

  2. Once the shallots have softened add in the chicken or turkey mince and cook until brown.

  3. In the meantime, mix together your sauce ingredients and set aside.

  4. Once the mince is nice and brown stir in your sauce and cook for a few minutes, until everything is well coated.

  5. To serve, spoon some filling into the lettuce cups and garnish with peanuts and coriander.

  6. Bundle it up and enjoy!
