Single-Serve Cinnamon Roll


When you’re craving that warming, heavenly comfort of a cinnamon roll but don’t want to make a whole batch, this is the perfect solution.


All you need for the dough is self-raising flour and Greek yoghurt and it’s ready in 20 minutes.


So simple yet so delicious…


And don’t get me started on how good your kitchen will smell!

 

Ingredients:

Dough:

  • 60g self-raising flour (or 60g plain flour + 1/2 tsp baking powder) + extra for rolling

  • 50g plain greek yoghurt (full-fat works best)

  • 1 tsp maple syrup (or 1/2 tsp vanilla essence + 1 tsp sweetener of choice)

Filling:

  • 2 tsp melted butter

  • 1 tsp cinnamon

  • 2 tsp brown sugar or sweetener of choice

Frosting:

  • 1 tsp cream cheese

  • 1 tsp greek yoghurt

  • 2 tsp icing sugar or sweetener of choice (or vanilla protein powder for added protein)

  • 1/4 tsp vanilla extract

  • Splash of almond milk to thin the frosting to desired consistency

Method:

  1. Preheat the oven to 175C / 375F / Gas mark 4.

  2. Combine the ingredients for the dough and knead into a ball.

  3. Sprinkle flour onto a clean surface and roll the dough out into a rectangle.

  4. Spread the butter over the dough and sprinkle with the cinnamon and sugar/ sweetener.

  5. Cut the rectangle into three vertical strips. Roll up the first strip, place it on top of the second strip, roll and repeat with the third strip.

  6. Place the cinnamon roll into a ramekin or oven-proof dish, brush with milk and bake for 15-20 minutes.

  7. In the meantime, mix together the ingredients for the frosting.

  8. Once the cinnamon roll has baked and cooled, top with the frosting and enjoy!
