Skillet Banana Bread


This single-serve skillet banana bread is exactly what you need when you’re craving banana bread but can’t be bothered with the faff of making a whole loaf.


Made with a few kitchen staples and ready in 20 minutes, you might actually never make a traditional load of banana bread again.


If you don’t have a skillet, you can use any oven-proof dish. This recipe makes enough for a 6-inch skillet for reference.

 

Ingredients

  • 40g oats

  • 1/2 large banana or 1 small banana (the riper the better)

  • 1 egg

  • 1 tbsp vanilla protein powder (optional but if not using add sweetener of choice)

  • 30ml milk of choice (I use unsweetened almond milk)

  • As many chocolate chips as your heart desires

  • 1 tsp vanilla essence

  • 1/2 tsp baking powder

Method:

  1. Preheat the oven to 180 C/ 350. Grease a small (6 inch) cast iron skillet or oven proof dish and coat with flour.

  2. Add all the ingredients except the chocolate chips to a blender and blend until the mixture is smooth with no lumps.

  3. Stir in the chocolate chips and pour into your greased skillet. Sprinkle more choc chips on top for extra chocolateyness.

  4. Pop the batter into the oven and bake for approximately 15 minutes.

  5. Grab a spoon and dig in while it’s still hot and gooey!
