Spicy Peanut Noodles


It should be impossible for something so quick and easy to taste soooo good.


Thick and creamy with just the right level of umami and a bit of a kick, these noodles are perfect for those “I don’t have time to breathe” days.


Add your choice of protein and veggies for a wholesome, nourishing main meal or have them on their own as a snack.

 

Ingredients:

  • 1 packet 2-minute noodles

  • 2 spring onions, chopped

  • 2 tbsp soy sauce

  • 1 tbsp peanut butter

  • 1 tbsp sesame oil

  • 1 tsp chilli flakes

  • 1/2 tsp minced garlic

  • 1/2 tsp grated ginger

  • Chopped peanuts for garnish

Method:

  1. Cook the noodles according to the instructions on the packet.

  2. In a bowl, add the chopped spring onions, soy sauce, peanut butter, garlic, ginger and chilli flakes.

  3. Heat the sesame oil and pour over the ingredients. Mix until smooth.

  4. Add the cooked noodles to the bowl and mix until completely coated in the sauce.

  5. Garnish with chopped peanuts, spring onions and fresh chillies.
