Bored of the same old thing for breakfast every morning?
Then you need to give this Sweet Potato Toast a try.
Loaded with as many or little toppings as your heart desires, I guarantee it will outshine any piece of dry toast or bowl of lumpy porridge.
Sweet or savoury, this sweet potato toast makes a delicious, filling and satisfying meal!
Ingredients:
1 large sweet potato
5ml oil of choice
Sweet Topping Options:
Nut butter
Jam
Biscoff Spread
Banana
Berries
Honey
Yoghurt
Seeds
Nuts
Desiccated coconut
Savoury Topping Options:
Hummus
Smashed avocado
Cream Cheese
Method:
If using an oven, preheat to 200ºC/ 400F/ Gas mark 7. If using an air fryer, set it to 200ºC/ 400F and allow it to heat up.
Cut off the ends of the sweet potato and carefully slice it into slices just under a cm thick.
Lay the slices out onto a baking tray or onto the air fryer basket and brush with oil if using.
Air fry/ bake for 20-25 minutes or until soft and cooked through.
Load the slices up with your choice of toppings and enjoy!
