Made with creamy mango, refreshing pineapple and zingy passionfruit, this tropical nice cream is exactly what the doctor ordered on those sunny summery days.
No ice or bananas required.
Ingredients:
100g frozen mango
100g frozen pineapple
1 or 2 passion fruit
100-120ml coconut milk (eg Alpro, RudeHealth), add more or less depending on desired consistenc
Method:
Scoop out the passion fruit pulp into a blender or food processor and add the mango, pineapple and coconut milk.
Blend until smooth and creamy.
Pour into a bowl and top with fruit, nuts, granola, coconut flakes etc and enjoy!
